Baking Apple Pie, and Autumn with NOIRKISS

Today, I’d love to share something special —
a story about baking apple pie on a quiet afternoon.
It reminds me so much of NOIRKISS’s A/W season mood —
gentle, heartfelt, and timeless.

🥧 Apple Pie Recipe —

“A Warm Slice of Autumn”

Ingredients (for one 20cm pie)

• 3 apples (peeled and thinly sliced)

• 60g sugar

• 1 tsp cinnamon powder

• 30g butter

• 1 tbsp lemon juice

• 250g cake flour

• 120g cold butter (cut into cubes and chilled)

• 4 tbsp cold water

• a pinch of salt

🪄 How to Make

1. Make the Pie Crust
   In a bowl, mix flour and salt,
   then add the cold butter pieces.
   Use your fingertips to blend until crumbly in texture.
   Add cold water little by little until the dough comes together,
   then wrap and rest it in the fridge for at least 30 minutes.

2. Prepare the Filling
   In a pan, melt the butter and add apples, sugar, cinnamon, and lemon juice.
   Cook over medium heat for about 7–10 minutes,
   until the apples turn glossy and tender.
   Remove from heat and let cool.

3. Assemble and Bake
   Roll out half of the dough and place it in a pie dish.
   Fill with the apple mixture,
   then roll the remaining dough into thin strips
   and lay them in a crisscross lattice pattern.
   Brush lightly with egg wash,
   and bake in a preheated oven at 180°C (350°F) for 40–45 minutes.

4. Finish
   Serve warm,
   and if you like, top with a scoop of vanilla ice cream —
   the perfect way to taste the gentle sweetness of autumn. 🍂
